The perfect steak feast for Friday night dinner

If you love steak as much as I do you won’t mind putting in  alittle effort to make this feast.

If you can marinating your wings the night before it will give them more flavour. I used yougurt, paprika, salt and pepper, they will take about 35 minutes in the oven, maybe alittle more depending on your oven, 180c fan, you want a nice colour on them.

Take your steak out of the fridge 30 minutes before cooking them, you want it room temperature.

I grilled the tomatoes and mushrooms, I have cherry tomatoes on the vine I think they just look so nice, just season them with salt and pepper.

Chips are homemade just peel them, then cut to the size you like, I’m a chunky type of guy, cook them in your frier at 130c for about 5 minutes or until soft, then up to 150c cook till they get a little colour, hold off on the last cook till you have everything else ready.

Your pepper sauce is a simple version, just crack black pepper, add cream and heat not boiling. When it’s warm add some gravey granules to thicken. Taste to see if it needs more pepper.

I made little a pesto in a pestle and mortar, some basil, garlic and olive oil, little salt and give it a good bashing.

Once your wings are done put them on a plate and cover in foil, at this point you can turn your grill on and put the mushrooms and tomatoes on medium heat.

We move onto the steak the most important part, I have sirloin steak here. Add little olive oil to the steak. Heat a pan till you see white smoke, if your steak has fat side fry that first, it will give it more flavour in the pan, then cook to your liking. I’m a medium rare person. So I’m about 4mins each side.

When your turn your steak to cook on the final side add some butter, garlic, fresh herbs and baste the steak in that lovely butter for the last 4 minutes, this will give you a beautiful flavour and colour to your steak.

When your steak is ready leave to rest for at least 5 minutes, this is very important before cutting, while your steak is resting it’s time to drop your chips again to finish them off, 170c till they are golden brown, then start plating the rest up the way you like, slice your steak add some of the pesto on the top and your ready to feast.
